A hearty chili, without the meat, our white beans chili stew recipe is great for lunch!
- 1 pound of dried great northern beans
- ¾ cup of onions, peeled and finely chopped
- ½ tbsp of vegetable oil
- ½ tbsp of cumin, ground
- ½ tbps of oregano, dry
- salt and pepper to taste
- 4 cups of vegetable broth
- 1 garlic clove, crushed
- 4 ounce can of green chilies, chopped
- chopped parsley
Place the beans in a deep pot. Add enough water to cover and bring it to a boil. Cook for several minutes and remove from the heat. Cover and let it stand for several hours until soften. Drain and rinse well.
Heat up some oil in a frying skillet. Add the onion and stir-fry for about one minute. Now add the beans, crushed garlic and vegetable broth.
Reduce the heat and cook for about two hours.
Preheat the oven to 350 degrees. Place the ingredients in a baking dish and coat well. Cover and cook for about an hour.
