A yummy appetizer no matter age, sex or religion 🙂
But in the past, this was a typical Romanian spread that people used to eat during religious fasts, such as before Christmas or Easter and it’s called “fasole batuta” (beaten beans).
Cooking time: 2 hours
- 1/3 kg of white beans
- 4-5 large onions
- 2 spring onions for decoration
- 4 cloves of garlic
- 3 carrots
- 200 ml sunflower oil
- 2 spoons of tomato paste
- salt and pepper
Wash the beans and boil them for 15 minutes, then drain and change the water; repeat once, using preheated water. Drain the beans again and add hot water, 4 of the onions, carrots and salt. Boil until the beans are soft and begin to brake (depending on the beans it will take around 1-1/2 hours).
Drain again, remove the carrots and onions. Mash the beans in the blender or (better) with a potato masher, in order to preserve some granulation. Add the garlic to this thick paste.
Chop the remaining onion and sautee it in a bit of sunflower oil; add the tomato paste when the onion becomes translucent. This is the garnish.
Let it cool down and spread it on toasted, whole bread, add some garnish and sprinkle some salt, pepper and add a few slices of green onion.
