Vegetable Broth Soup - Vegan Recipe

They say soup is food for the soul. Try our vegetable broth soup, good for your stomach and for your soul 🙂

Ingredients:

  • 3 cups of vegetable broth
  • 1 medium-sized carrot, peeled and sliced
  • 1 small potato, peeled and chopped
  • 1 tbsp of finely chopped parsley
  • 3 tbsp of olive oil
  • Salt and pepper to taste

Preparation:

Heat up the olive oil over a medium-high heat. Add sliced carrot and fry for a couple of minutes. Now add chopped potato, some salt and pepper and stir well. Cook for another 2-3 minutes.

Add vegetable broth and bring it to a boil. Reduce the heat and cover. Simmer until vegetables have softened.

Sprinkle some finely chopped parsley and serve. Enjoy our vegetable broth soup recipe!
