- 2 cups of soy milk
- ½ cup of sugar
- 2 tbsp of vanilla extract
- 2 tbsp of cornstarch
- Chocolate topping (optional)
- Fresh strawberries (optional)
Combine all dry ingredients in a bowl. Gently whisk in milk and mix well until the mixture doesn’t have any dry lumps. Now add the vanilla extract and mix again.
Bring the mixture to a boiling point. Reduce the heat and cook for several minutes, stirring constantly.
When the mixture thickens, remove from the heat and pour into serving bowls. Allow it to cool well before serving.
Top the vegan pudding with some chocolate topping and strawberries.
