Jericoacoara, located in the Ceara district of Brazil, is a lovely, remote hippie surfers’ village, surrounded by amazingly beautiful white sand dunes. The Atlantic coast is rich in color, taste and good music.

- 4 Palmitos (aka palm hearts, you can find them easily in South America)
- 1 Carrot, cut into strips
- 1 Tomato, cut into big pieces
- 1/2 Mango, sliced
- 1/2 Cucumber, sliced
- 4 Lettuce leaves
- 5 spinach leaves
- Olives (green or black)
- Olive oil
- Salt & pepper to taste
Arrange everything on a big, white plate. Try to make it look good, looks is very important for good food 🙂
Sprinkle some salt, pepper on top. Add a few drops of olive oil and lime juice (if you want). Enjoy the vegan palmito salad!
