Italian pasta, such as this vegetarian Tortellini with Cheese Sauce recipe, is easy to prepare, light and delicious.
- 1 (16 ounce) package frozen cheese tortellini
- 3 cups of vegetable broth
- 1 cup of sour cream
- 2 tbsp of whipped cooking cream
- 2 oz Gorgonzola cheese
- ¼ tsp of Cayenne pepper
- a handful of fresh parsley, finely chopped
In a deep pot, bring 3 cups of vegetable broth to boil. Add frozen cheese tortellini and cook for 7 minutes. Remove from the heat and drain.
Reduce the heat to minimum and melt the Gorgonzola cheese. Slowly pour in the sour cream, whipped cooking cream and cayenne pepper. Cook for a couple of minutes.
Transfer the tortellini on a plate, top with cheese sauce and sprinkle with chopped parsley.
Serve the Cheese sauce Tortellini warm and enjoy!
