Vegetarian Tomato Omelette

Bacon may be tasty, but tomatoes don’t scream. So try our delicious Tomato Omelette for breakfast and spare Porky today 🙂


  • ½ red bell pepper
  • 1 ripe tomato
  • 2 eggs
  • 1 tsp of butter
  • 2 tbsp of oil
  • Salt and pepper to taste
  • Dry oregano

Tomato Omelette Preparation:

Slice the pepper and tomato into thin slices.

Heat up the olive oil over medium-high temperature and add the vegetables and oregano. Stir-fry for about 5 minutes, or until lightly charred.

Crack the eggs and add to the frying pan. Season with some salt and pepper and reduce the heat to minimum.

When the eggs begin to thicken, add the butter and allow it to melt.

Serve this tasty vegetarian tomato omelette warm, with fresh spring onions. Enjoy!
