Everybody likes sweet pancakes, but what about the salty ones? Our cheese & spinach pancakes recipe is vegetarian, rich and salty.
- 1 cup of all purpose flour
- 2 eggs
- ½ tsp of salt
- 1 tbsp of sour cream
- 2 tsp of baking powder
- 1 cup of milk
- 1 cup of cottage cheese
- 1 cup of spinach, cooked and drained
- non-fat cooking spray
Spinach Pancakes Preparation:
Combine the flour, eggs, salt, sour cream, baking powder, and 1 cup of milk in a bowl. Mix well with an electric mixer until nice and smooth mixture. Cover it and let it stand for 15 minutes.
In another bowl, mix the cottage cheese with drained spinach. Beat well with a fork. Set aside.
Sprinkle some non-fat cooking spray on a frying pan. Use ¼ cup of dough mixture to make one thin pancake. Fry your pancakes for about 10-15 seconds on each side. This mixture should give you 6 pancakes.
Spread 1 tbsp of cheese mixture over each cheese and spinach pancake and serve.

This rice pudding recipe is a popular dessert in many countries around the world. Traditionally they use normal milk, but today we will present to you our vegan recipe (with soy milk).
- 1 cup of uncooked rice
- 3 cups of soy milk
- 1 tsp of cinnamon
- 3 tbsp of sugar
Rice Pudding Preparation:
Use package instructions to cook the rice. In a medium sized saucepan bring 3 cups of milk to boil.
Add pre-cooked rice, sugar, and stir well. Cook for about 20 minutes, or until you get a creamy mixture. Stir in some cinnamon and remove from the heat.
Allow it to cool in the refrigerator before serving.
You can change the flavor of this pudding by adding some fruit extract. Any kind of sour berries will be perfect.
Even better option is to top this pudding with some fresh wild berries, or make a few layers in a pudding glass.
Use normal (animal) milk and make the pudding vegetarian (not vegan). You can use any kind of milk you like

- 1 medium pizza crust
- ½ cup of sugar free pizza sauce
- ½ cup of chopped spinach
- ½ small onion, chopped
- 1 cup of tofu, sliced
- 5 slices of vegan mozzarella
- 1 tbsp of dry oregano
- 1 tbsp of olive oil
- a few olives
Preheat the oven to 350 degrees. Lay the pizza crust on a baking sheet. Spread the sauce over the pizza crust.
Now add the spinach and the onions. Make a final layer with sliced tofu and mozzarella.
Top with oregano and few olives. Drizzle the olive oil. Bake for about 10-15 minutes, cut and serve immediately.
Useful tip 1
For the vegetarian version of this pizza, just use normal mozzarella instead of vegan mozzarella and you’re all set.

With this roasted avocado recipe you can really be creative, it is very tasty and versatile, as you will see below.
- 3 medium ripe avocados, cut in half
- 1 medium tomato, finely chopped
- 3 tbsp of olive oil
- 2 tsp of dried rosemary (you can use dry oregano instead)
- salt and pepper to taste
Preheat oven to 350 degrees. Cut avocado in half and remove the flesh from the center. Place chopped tomato in each avocado half and sprinkle with rosemary, salt and pepper.
Grease the baking pan with olive oil and place the avocados. You want to use a small baking pan so your avocados can fit tightly.
Place in the oven for about 15-20 minutes.
Useful tip 1:
You can practically put anything in each avocado half and it will be great. Or maybe you can combine and make each avocado half different.
Try with tofu, coconut whipped cream, combine some other vegetables. The options are huge. I like to add some eggplant flesh and mix with some almonds. The preparation method is always the same.
For the vegetarian version, you can add some eggs or just egg whites. These little healthy are truly amazing.
Useful tip 2:
You can use eggplant instead of avocado. Combine it with some nuts and you will get a famous Turkish Imam Bayildi recipe. The preparation process is the same.
