Green spinach smoothie – Vegan recipe

Spinach is one of our favorite smoothie ingredient. Try it, it’s packed with Iron and Vitamin C!

Ingredients:

  • ½ cup of finely chopped spinach
  • 1 cup of fresh orange juice
  • 3-4 frozen blackberries
  • 2 tbsp of sugar
  • a handful of nuts of your choice

Preparation:

Combine the ingredients in a blender and mix for about 20 seconds. Top with some blackberries and serve cold. Enjoy our vegan spinach smoothie recipe!

Blue Cheese Ravioli – Vegetarian Recipe

Ingredients:

Ravioli

  • 2 ½ cups of all purpose flour
  • ½ cups of water
  • 3 eggs
  • 3 egg whites
  • ½ tsp of salt
  • 3 tbsp of olive oil

Ravioli Filling

  • 2 tbsp of olive oil
  • ¼ cup of spinach, chopped
  • 2 blue cheese, chopped
  • 1 cup of low fat yogurt
  • ¼ tsp of salt (be careful with this, blue cheese is salty)

Blue Cheese Ravioli Preparation:

In a large bowl, combine all purpose flour, water, eggs, olive oil and salt. You want to make a smooth dough. Cover and let it stand in a warm place for about 30 minutes.

Briefly boil spinach in salted water, drain and cut. Combine with blue cheese, yogurt, oil, and salt.

Roll the dough thinly, cut out circles using molds and put in each hemisphere spoon of stuffing. Replace the second part of dough and press the edges with a fork so that the stuffing does not fall off.

Cook ravioli in boiling water to which you have added a little salt and olive oil. It should take about 15 minutes. Remove from the saucepan and drain. Serve with some low fat cream on top (this is optional).

Cheese Salad

Cheese Salad Vegetarian Recipe
Vegetarian Cheese Salad

Ingredients

  • 1 cup of cherry tomatoes
  • ½ cup of Dziugas cheese, sliced
  • ½ cup of lamb’s spinach
  • 1 small orange
  • 1 tbsp of Parmesan cheese
  • a few parsley leaves
  • 1 tsp of fresh lemon juice

Cheese Salad Preparation

Combine the ingredients in a large bowl and add lemon juice. Mix well and serve.

Spinach Pie Vegetarian Recipe

Like most spinach & cheese recipes, this Spinach Pie has a rich taste and it is a hearty food. Serve it hot or cold for breakfast, lunch or dinner.

Ingredients:

  • 1 pack (9 ounces) of fresh spinach, chopped
  • 4 whole eggs
  • ½ cup of whole milk
  • 2 ounces of crumbled Feta cheese
  • ¼ cup grated Parmesan cheese
  • ½ cup shredded Mozzarella cheese
  • 1 teaspoon of butter
  • salt and black pepper, to taste
  • 1 pack of pie crust

Spinach Pie Preparation:

Preheat an oven to a temperature of 350°F. Lightly grease a baking dish with butter and set aside.

Place one pie crust on the bottom of your baking dish.

Whisk the eggs thoroughly in a mixing bowl, mix in the milk and grated Parmesan and whisk until well incorporated. Set aside.

Place the chopped spinach on the greased pie crust and add crumbled Feta cheese. Pour in the egg mixture and cover the other ingredients completely.

Place another pie crust on top and bake for about 40 to 45 minutes or until the cheese has melted and lightly browned.

Remove from the oven and let it rest for 5 minutes before serving.

Cheese and Spinach Pancakes Vegetarian Recipe

Everybody likes sweet pancakes, but what about the salty ones? Our cheese & spinach pancakes recipe is vegetarian, rich and salty.

Ingredients:

  • 1 cup of all purpose flour
  • 2 eggs
  • ½ tsp of salt
  • 1 tbsp of sour cream
  • 2 tsp of baking powder
  • 1 cup of milk
  • 1 cup of cottage cheese
  • 1 cup of spinach, cooked and drained
  • non-fat cooking spray

Spinach Pancakes Preparation:

Combine the flour, eggs, salt, sour cream, baking powder, and 1 cup of milk in a bowl. Mix well with an electric mixer until nice and smooth mixture.  Cover it and let it stand for 15 minutes.

In another bowl, mix the cottage cheese with drained spinach. Beat well with a fork. Set aside.

Sprinkle some non-fat cooking spray on a frying pan. Use ¼ cup of dough mixture to make one thin pancake. Fry your pancakes for about 10-15 seconds on each side. This mixture should give you 6 pancakes.

Spread 1 tbsp of cheese mixture over each cheese and spinach pancake and serve.

Ingredients:

  • ½ cup of chopped spinach
  • ½ cup of raspberries
  • ½ apple, sliced
  • 1 kiwi, peeled and sliced
  • 1 tbsp of apricot seeds
  • 3 tbsp of brown sugar
  • 1.5 cups of water

Combine the ingredients in a blender. Mix well for about 20 seconds. Serve cold.
