Vegetarian food is Not boring. This Mushroom Cannelloni Recipe is the perfect example of a rich taste, filling lunch.
- 1 pack of cannelloni (8.8oz)
- 3oz butter
- 3oz all-purpose flour
- 2pts milk
- 8.8oz ricotta cheese
- 3oz grated Parmesan cheese
- 5oz button mushrooms, thinly sliced
- Seasoning to taste
Bring the butter, flour and milk slowly to a boil, whisking constantly until thickened. Put half of the sauce into a bowl and mix with ricotta, Parmesan, mushrooms, and seasoning to taste.
Use to fill the cannelloni and arrange in a buttered baking dish. Cover with remaining white sauce and place in the oven for 40 minutes, or until golden brown.

- 1 cup of cherry tomatoes
- ½ cup of Dziugas cheese, sliced
- ½ cup of lamb’s spinach
- 1 small orange
- 1 tbsp of Parmesan cheese
- a few parsley leaves
- 1 tsp of fresh lemon juice
Cheese Salad Preparation
Combine the ingredients in a large bowl and add lemon juice. Mix well and serve.

Like most spinach & cheese recipes, this Spinach Pie has a rich taste and it is a hearty food. Serve it hot or cold for breakfast, lunch or dinner.
- 1 pack (9 ounces) of fresh spinach, chopped
- 4 whole eggs
- ½ cup of whole milk
- 2 ounces of crumbled Feta cheese
- ¼ cup grated Parmesan cheese
- ½ cup shredded Mozzarella cheese
- 1 teaspoon of butter
- salt and black pepper, to taste
- 1 pack of pie crust
Spinach Pie Preparation:
Preheat an oven to a temperature of 350°F. Lightly grease a baking dish with butter and set aside.
Place one pie crust on the bottom of your baking dish.
Whisk the eggs thoroughly in a mixing bowl, mix in the milk and grated Parmesan and whisk until well incorporated. Set aside.
Place the chopped spinach on the greased pie crust and add crumbled Feta cheese. Pour in the egg mixture and cover the other ingredients completely.
Place another pie crust on top and bake for about 40 to 45 minutes or until the cheese has melted and lightly browned.
Remove from the oven and let it rest for 5 minutes before serving.
