Sweet Arugula Salad – Vegan Recipe

Sweet arugula salad, vegetarian recipeNot quite your usual fruit salad, the sweet arugula salad is a vitamin & energy snack perfect at any age (provided you don’t have high blood-sugar).

Ingredients:

  • 2 oz fresh arugula
  • 1 orange, peeled and sectioned
  • 5-6 fresh strawberries
  • ¼ cup of fresh cranberries
  • 1 tbsp of honey
  • 3 tbsp of fresh lime juice
  • 5 tbsp of fresh orange juice
  • ¼ tsp of ground cinnamon

Preparation:

Whisk together 1 tablespoon of honey with fresh lime juice, fresh orange juice, and ground cinnamon.

Soak each piece of fruit into this mixture and transfer to a serving platter. Add fresh arugula and mix well. Serve cold and enjoy!
