Not quite your usual fruit salad, the sweet arugula salad is a vitamin & energy snack perfect at any age (provided you don’t have high blood-sugar).
- 2 oz fresh arugula
- 1 orange, peeled and sectioned
- 5-6 fresh strawberries
- ¼ cup of fresh cranberries
- 1 tbsp of honey
- 3 tbsp of fresh lime juice
- 5 tbsp of fresh orange juice
- ¼ tsp of ground cinnamon
Whisk together 1 tablespoon of honey with fresh lime juice, fresh orange juice, and ground cinnamon.
Soak each piece of fruit into this mixture and transfer to a serving platter. Add fresh arugula and mix well. Serve cold and enjoy!
