Borderline between omelette and fried eggs, this Vegetarian Spinach Omelette is bound to make a breakfast to remember.

- 0.5 pound of fresh (washed) spinach, finely chopped
- 1 cup of kefir
- 1 tbsp of butter
- 2 whole eggs
- Salt to taste
Spinach Omelette Preparation:
Combine the spinach with kefir in a food processor. Mix well for about 20-30 seconds, until smooth mixture.
Melt the butter in a large skillet, over a medium temperature.
Pour in the spinach mixture and reduce the heat to minimum. Cook for about 10 minutes and then increase the heat to maximum. Stir-fry for 3-4 minutes and add eggs.
Season with some salt and fry until whites are completely set. Gently remove from the skillet and serve with a glass of kefir.
