Mixed Berries Smoothie Vegan Recipe

Ingredients:

  • ¼ cup of strawberries
  • ¼ cup of blueberries
  • ¼ cup of raspberries
  • ¼ cup of blackberries
  • 1 Macadamian nut
  • ½ tbsp walnuts, ground
  • 1 cup of fresh strawberry juice
  • 2 tbsp of brown sugar
  • ½ cup of water

Mixed Berries Smoothie Preparation:

Mix the ingredients in a blender for 30 seconds. I like to add a handful of ice cubes, but this is optional.

Useful tip

Add 1.5 cup of soy milk (or any other milk you like) instead of strawberry juice and water. Combine the ingredients and keep in the freezer overnight. This will give you a great ice cream.

Green Smoothie Vegan Recipe

This green smoothie is packed with vitamins, but it’s also fresh and tasty. Make it for breakfast and start the day in true vegan style!

Ingredients:

  • ½ cup of chopped spinach
  • ½ cup of raspberries
  • ½ apple, sliced
  • 1 kiwi, peeled and sliced
  • 1 tbsp of apricot seeds
  • 3 tbsp of brown sugar
  • 1.5 cups of water

Green Smoothie Preparation:

Combine the ingredients in a blender. Mix well for about 20 seconds. Serve cold.

Apple Puree Vegan Recipe

Ingredients:

  • 10 medium sized Alkmene apples
  • 2 tsp of ground cinnamon (can be replaced with some other sweet spices)
  • 10 tbsp of brown sugar (you can add more or less, depends on your taste)
  • Water to cook the apples

Preparation:

This will give you enough puree for a medium sized jar. If you need more, or less, simply adjust the ingredients. And if you want that extra apple flavor, add few drops of apple extract.

Wash and peel the apples. Cut into quarters and remove the core. Place them in a large pot and pour enough water to cover them (10 cups shound do the job). Bring them to a boiling point and keep cooking until soft. Stir occasionally.

After about 20 minutes, remove from the heat and drain. Allow it to cool for a while and mash with a fork or even better with an electric mixer.

The puree has to stay soft and smooth. You don’t want some apple pieces in it. This is why you should always use the electric mixer. You just can’t get that puree consistency with fork.

Keep your puree in a jar with tight lid. It has to be in the refrigerator.

Roasted Avocado Vegan Recipe

With this roasted avocado recipe you can really be creative, it is very tasty and versatile, as you will see below.

Ingredients:

  • 3 medium ripe avocados, cut in half
  • 1 medium tomato, finely chopped
  • 3 tbsp of olive oil
  • 2 tsp of dried rosemary (you can use dry oregano instead)
  • salt and pepper to taste

Preparation:

Preheat oven to 350 degrees. Cut avocado in half and remove the flesh from the center. Place chopped tomato in each avocado half and sprinkle with rosemary, salt and pepper.

Grease the baking pan with olive oil and place the avocados. You want to use a small baking pan so your avocados can fit tightly.

Place in the oven for about 15-20 minutes.

Useful tip 1:

You can practically put anything in each avocado half and it will be great. Or maybe you can combine and make each avocado half different.

Try with tofu, coconut whipped cream, combine some other vegetables. The options are huge. I like to add some eggplant flesh and mix with some almonds. The preparation method is always the same.

For the vegetarian version, you can add some eggs or just egg whites. These little healthy are truly amazing.

You can use eggplant instead of avocado. Combine it with some nuts and you will get a famous Turkish Imam Bayildi recipe. The preparation process is the same.

Hazelnut Cream Vegan Recipe

The Hazelnut Cream vegan recipe is quite easy to prepare and will give you a good start for the day.

Ingredients:

  • 1 tbsp of flour
  • 2 tbsp of brown sugar
  • ¼ cup of grated hazelnuts
  • 1 tbsp of cocoa powder
  • 1 tbsp of cornstarch
  • 1 cup of soy milk
  • 1 tsp of vanilla extract
  • 5 tbsp of hot water

Preparation:

Combine the flour, brown sugar, hazelnuts, cocoa powder, cornstarch, vanilla extract and hot water in a bowl. Mix well using an electric mixer. Set aside. Boil the soy milk over a low – medium temperature.

Add cocoa mixture and reduce the heat. Simmer for 10 minutes, stirring constantly. When the mixture thickens, remove from the heat. Allow it to cool for a while. Keep in the refrigerator.

Useful tip 1

You can prepare this cream with different kinds of nuts. Simply replace the hazelnuts with some other nuts of your choice.

Be sure to try some of the cream before it thickens. You may want to add some more sugar. This really depends on your taste.
