Hot Lentils Stew – Vegan Recipe

Ingredients:

  • 10oz lentils
  • 1.5 tbsp of olive oil
  • 1 medium-sized carrot, peeled and sliced
  • 1 small potato, peeled and chopped
  • 1 bay leaf
  • ¼ cup of parsley, finely chopped
  • ½ tbsp of chili powder
  • Salt to taste
