Want a little taste of North Africa? Taste this delicious Vegan Moroccan Salad.

Ingredients:

  • 1 cup of chopped lettuce
  • ½ cup of chopped baby spinach
  • 2 medium sized oranges
  • ¼ cup of walnuts (almonds are also a great option)
  • ¼ cup of dates, finely chopped (always choose fresh dates)
  • 1 tbsp of fresh orange juice (if you think that taste is too sweet for you, simply replace it with lime juice)

Moroccan Salad Preparation:

Combine the ingredients in a large bowl and season with orange (or lime) juice. Mix well and serve cold.

Mushroom Risotto Vegan Recipe

If you like mushrooms and you are a vegetarian or vegan, this mushroom risotto could become your favorite filling dish.

Ingredients:

  • ½ cup of rice
  • 2 cups of fresh mushroom mix
  • ½ cup of cooked broccoli
  • 1 tbsp of olive oil
  • 2 tbsp of vegetable oil
  • 1 tbsp of dry rosemary
  • 1 tsp of lime juice
  • salt
  • pepper

Mushroom Risotto Preparation:

First you need to cook the rice. Wash and rinse it and put in a saucepan with 1 cup of water. Stir well and bring to the boiling point. Cover the pan with a lid and cook for about 15 minutes on a low temperature. Remove from the heat and allow it to cool.

Now you want to prepare the mushrooms. Wash and cut into a similar size pieces. Heat up the vegetable oil over a medium temperature. Add mushrooms and stir well.

Cook until all the mushrooms soften, or until all the water evaporates. Remove from the frying pan. Add salt and mix with rice and broccoli.

Season with dry rosemary, pepper and lime juice. Serve the mushroom risotto warm.

Wok Mix Vegan Recipe

Ingredients:

  • 1 medium red pepper, cut into strips
  • 1 medium green pepper, cut into strips
  • 7-8 pieces of baby corn
  • ½ cup of canned button mushrooms
  • 1 cup of cauliflower
  • 1 medium carrot, peeled and cut into strips
  • 1 tsp soy sauce
  • 1 tsp of oyster sauce
  • Salt to taste
  • 1 tbsp of olive oil

Vegan Wok Mix Preparation:

In a large wok, heat up the olive oil over a high temperature. Now you can add vegetables. But you have to keep one thing in  mind – some vegetables take more time to cook.

This is why you will first add carrot strips and cauliflower, as theese vegetables take the most time to cook. Cook for about 10 minutes.

Now add red and green pepper strips, baby corn, button mushrooms, soy sauce and oyster sauce. Cook for another 5-7 minutes.

You don’t want to overcook the vegetables. Vegetables in wok should be nice and crispy.

You can serve your vegetables with rice, pasta, or boiled potatoes. I like to serve it with standard white rice sprinkled with turmeric.

Brown rice pasta is also a very nice side dish for this lunch. Use Chineese sticks and you will have an amazing exotic meal.

Apple Puree Vegan Recipe

Ingredients:

  • 10 medium sized Alkmene apples
  • 2 tsp of ground cinnamon (can be replaced with some other sweet spices)
  • 10 tbsp of brown sugar (you can add more or less, depends on your taste)
  • Water to cook the apples

Preparation:

This will give you enough puree for a medium sized jar. If you need more, or less, simply adjust the ingredients. And if you want that extra apple flavor, add few drops of apple extract.

Wash and peel the apples. Cut into quarters and remove the core. Place them in a large pot and pour enough water to cover them (10 cups shound do the job). Bring them to a boiling point and keep cooking until soft. Stir occasionally.

After about 20 minutes, remove from the heat and drain. Allow it to cool for a while and mash with a fork or even better with an electric mixer.

The puree has to stay soft and smooth. You don’t want some apple pieces in it. This is why you should always use the electric mixer. You just can’t get that puree consistency with fork.

Keep your puree in a jar with tight lid. It has to be in the refrigerator.

Green Pizza Vegan Recipe

Ingredients:

  • 1 medium pizza crust
  • ½ cup of sugar free pizza sauce
  • ½ cup of chopped spinach
  • ½ small onion, chopped
  • 1 cup of tofu, sliced
  • 5 slices of vegan mozzarella
  • 1 tbsp of dry oregano
  • 1 tbsp of olive oil
  • a few olives

Preparation:

Preheat the oven to 350 degrees. Lay the pizza crust on a baking sheet. Spread the sauce over the pizza crust.

Now add the spinach and the onions. Make a final layer with sliced tofu and mozzarella.

Top with oregano and few olives. Drizzle the olive oil. Bake for about 10-15 minutes, cut and serve immediately.

Useful tip 1

For the vegetarian version of this pizza, just use normal mozzarella instead of vegan mozzarella and you’re all set.

Roasted Avocado Vegan Recipe

With this roasted avocado recipe you can really be creative, it is very tasty and versatile, as you will see below.

Ingredients:

  • 3 medium ripe avocados, cut in half
  • 1 medium tomato, finely chopped
  • 3 tbsp of olive oil
  • 2 tsp of dried rosemary (you can use dry oregano instead)
  • salt and pepper to taste

Preparation:

Preheat oven to 350 degrees. Cut avocado in half and remove the flesh from the center. Place chopped tomato in each avocado half and sprinkle with rosemary, salt and pepper.

Grease the baking pan with olive oil and place the avocados. You want to use a small baking pan so your avocados can fit tightly.

Place in the oven for about 15-20 minutes.

Useful tip 1:

You can practically put anything in each avocado half and it will be great. Or maybe you can combine and make each avocado half different.

Try with tofu, coconut whipped cream, combine some other vegetables. The options are huge. I like to add some eggplant flesh and mix with some almonds. The preparation method is always the same.

For the vegetarian version, you can add some eggs or just egg whites. These little healthy are truly amazing.

Useful tip 2:

You can use eggplant instead of avocado. Combine it with some nuts and you will get a famous Turkish Imam Bayildi recipe. The preparation process is the same.

Vegan Mozzarella Recipe

It’s hard not to love mozzarella. But what to do when you’re a vegan? Cook vegan mozzarella and use it for other recipes (like our green vegan pizza).

Ingredients

  • 2 cups of warm water
  • 4 tbsp of tapioca starch
  • 2 tbsp of olive oil
  • ½ cup of cashews
  • pinch of salt
  • 2 cloves of garlic, crashed
  • 2 tbsp of freshly squeezed lemon juice

Vegan Mozzarella Preparation:

Combine the ingredients in a blender for about 20 seconds. Transfer to a jar and keep in the refrigerator.

Hazelnut Cream Vegan Recipe

The Hazelnut Cream vegan recipe is quite easy to prepare and will give you a good start for the day.

Ingredients:

  • 1 tbsp of flour
  • 2 tbsp of brown sugar
  • ¼ cup of grated hazelnuts
  • 1 tbsp of cocoa powder
  • 1 tbsp of cornstarch
  • 1 cup of soy milk
  • 1 tsp of vanilla extract
  • 5 tbsp of hot water

Preparation:

Combine the flour, brown sugar, hazelnuts, cocoa powder, cornstarch, vanilla extract and hot water in a bowl. Mix well using an electric mixer. Set aside. Boil the soy milk over a low – medium temperature.

Add cocoa mixture and reduce the heat. Simmer for 10 minutes, stirring constantly. When the mixture thickens, remove from the heat. Allow it to cool for a while. Keep in the refrigerator.

Useful tip 1

You can prepare this cream with different kinds of nuts. Simply replace the hazelnuts with some other nuts of your choice.

Be sure to try some of the cream before it thickens. You may want to add some more sugar. This really depends on your taste.
