Mexican Salad Dressing / Dip – Vegetarian Recipe

Mexican Salad Dressing
You can use this as a Mexican Salad Dressing or as a Dip.

When you say “Mexican Salad Dressing” or Dip, you think about parties, right? Well, this one is just perfect for a good time with friends!


  • 2 large tomatoes
  • 2 red bell peppers
  • 1 large onion
  • 2 garlic cloves, mashed
  • Salt and pepper to taste
  • ¼ tsp of chili pepper, ground
  • 2 tbsp of olive oil


First you have to prepare the vegetables. Peel and finely chop the onion. Wash and finely chop the tomatoes and red bell peppers.

Heat up the olive oil in a large skillet, over medium temperature. Add onions and garlic. Reduce the heat to minimum. Stir well and cook for about 3-4 minutes, until nice yellow/golden color.

Add the tomatoes, bell peppers, salt, pepper, and ground chili pepper. Simmer for about 15 minutes, or until all the water evaporates. Stir occasionally.

Useful tip:

Add ½ glass of white wine while cooking and you will get a perfect appetizer, side dish or even salsa.

Remove from the heat and serve. Enjoy your Mexican salad dressing!
