Mexican Bean Salad – Vegan Recipe

  • 1 cup of cooked beans
  • ½ cup of sweet corn
  • 3 spring onions, chopped
  • ¼ small chili pepper, finely chopped
  • ¼ tsp of cilantro
  • ½ tsp of red wine vinegar
  • 1 tsp of fresh lemon juice
  • 3 tbsp of extra-virgin olive oil
  • a pinch of salt


In a small bowl, combine the olive oil with red wine vinegar, fresh lemon juice, cilantro, and a pinch of salt. Mix well and use to season the other ingredients.

Serve and enjoy!
