Mediterranean Bean Salad - Vegan Recipe

Mediterranean food is light and healthy, but tasty. So is this Mediterranean Bean Salad. And it’s vegan, too!

Ingredients:

  • ½ cup of cooked beans
  • ½ cup of cooked soy
  • ½ tomato
  • ½ cup of finely chopped lettuce

Homemade salad dressing:

  • ¼ cup of olive oil
  • 1 tbsp of fresh parsley, finely chopped
  • 1 tsp of dry rosemary
  • ¼ tsp of salt
  • 1/8 tsp of pepper

Preparation:

Whisk together the dressing ingredients in a small bowl. Set aside.

Now combine the cooked beans, soy, roughly chopped tomato, and lettuce in a medium-sized bowl. Pour the dressing over and toss well to combine. Enjoy our vegan Mediterranean bean salad!
