Mediterranean food is light and healthy, but tasty. So is this Mediterranean Bean Salad. And it’s vegan, too!
- ½ cup of cooked beans
- ½ cup of cooked soy
- ½ tomato
- ½ cup of finely chopped lettuce
Homemade salad dressing:
- ¼ cup of olive oil
- 1 tbsp of fresh parsley, finely chopped
- 1 tsp of dry rosemary
- ¼ tsp of salt
- 1/8 tsp of pepper
Whisk together the dressing ingredients in a small bowl. Set aside.
Now combine the cooked beans, soy, roughly chopped tomato, and lettuce in a medium-sized bowl. Pour the dressing over and toss well to combine. Enjoy our vegan Mediterranean bean salad!
