Mashed Cauliflower Salad – Vegetarian Recipe


  • 2 cups of cauliflower, chopped
  • fresh water
  • ½ cup of skim milk
  • 1 tbsp of Greek yogurt
  • salt
  • 1 tsp of dry mint (or any other seasoning of your choice)

Mashed Cauliflower Salad Preparation:

Wash and roughly chop the cauliflower. Cook for about 15-20 minutes in salted water. When done, drain and mash it with a fork. Add milk, Greek yogurt, and mix well until smooth mixture.

I always do this with an electric mixer. Add some more salt if you want and sprinkle with dry mint.
