Hot Lentils Stew – Vegan Recipe

  • 10oz lentils
  • 1.5 tbsp of olive oil
  • 1 medium-sized carrot, peeled and sliced
  • 1 small potato, peeled and chopped
  • 1 bay leaf
  • ¼ cup of parsley, finely chopped
  • ½ tbsp of chili powder
  • Salt to taste


Heat up the oil in a medium-sized skillet. Add sliced carrot, chopped potato and parsley.

Mix well and stir-fry for about five minutes. Now add the lentils, 1 bay leaf, some salt and chili powder.

Add about 4 cups of water and bring it to a boil. Reduce the heat, cover and cook until the lentils soften.

Sprinkle with some parsley before serving. Enjoy your Hot Lentils Stew for lunch!
