Warm or cold, this vegetarian homemade spinach pie is suitable for any moment of the day. What a delicious recipe it is!

- 2 pounds of fresh spinach
- ¼ cup of Feta cheese, crumbled
- ½ cup of sour cream
- ½ cup of blue cheese, chopped
- 2 eggs
- 2 tbsp of butter
- Salt to taste
- 1 pack of pie crust
- Vegetable oil
Preheat the oven to 350°F. Use one tablespoon of butter to grease the baking dish. Set aside.
Combine the ingredients in a large bowl and mix well. Grease the pie crust with some oil, using a kitchen brush. Spread the spinach mixture over the pie crust and roll. Place in a baking dish and bake for about 30-40 minutes, or until lightly charred.

You can add some other cheese in the spinach mixture and make your own mixture. Play with it and experiment what works for you.
You can also add fresh dandelion leaves. In that case, the mixture would be about 1.5 pounds of fresh spinach and about 0.5 pounds of fresh dandelion leaves.
