Homemade Romanian Vegetable Soup @ Puerto Viejo, Costa Rica

Ciorba de legume romaneasca (Romanian vegetable soup) in the Kitchen of Hostel Playa 506 @Puerto Viejo, Limon, Costa Rica

Ciorba de legume (in Romanian) is a vegan sour soup, homemade with various vegetables in Costa Rica (maybe first “ciorba” to be cooked in Puerto Viejo in the kitchen of hostel Playa 506). Delicious and healthy lunch 🙂

Preparation time: 20 minutes
Cooking time: 30 minutes
Yield: 4-6 portions

Ingredients:

  • 2 medium onions
  • 1 red/green sweet pepper
  • 2 carrots
  • 5 small potatoes
  • 1 medium zucchini
  • 2 small tomatoes
  • 2 celery stalks
  • parsley
  • olive oil
  • bay leaves
  • black pepper
  • tomato paste
  • Himalaya salt
  • whatever other vegetables you have around can go into this soup

Preparation:

Clean, cut and dice all vegetables. Heat some olive oil in a deep pot, then saute the potatoes, onions and carrots until the onion becomes translucent.

Add the rest of the vegetables and boil until the potatoes and carrots become soft. Add the tomato paste, salt, pepper, hot chili if you like it spicy. Boil for 10 minutes more.

Add more spices of your taste.

For a more tasty “ciorba” take a raw egg, a cup of the hot soup and mix them well; then add the mixture (“zdrente”) in the soup. It will not be vegan anymore, but it will be tastier.

Serve in white bowls (haha) with some chopped parsley on top. Enjoy our “ciorba de legume” vegan recipe!
