Grilling outdoors? The salad is an easy and delicious option for you, that we’ve just improvised.

For the dressing we used a lot of spring garlic, spring onions, olive oil, lemon, a drizzle of soda, salt and pepper.
- 2-3 medium zucchinis
- Champignon mushrooms
- spring garlic
- spring onion
- olive oil, lemons
- salt, pepper, paprika
- optional: yellow cheese
Wash the vegetables. Cut the zucchini into slices or wedges, skin on. Separate the stem of the mushrooms. Grill the zucchini for a few minutes on each side (5 minutes max) and mushrooms for 2-3 minutes. Slice the and spring onion and garlic.
Put the grilled zucchinis while still hot in a big bowl, add salt, olive oil, a drizzle of soda, spring onion and garlic and toss everything for a minute. Put a lid on and allow a few minutes for the flavors to mix.
You can stay vegan or add some cheese, spring onions and paprika to stuff the mushrooms before grilling, for more flavor.
