Here something for a vegan barbecue – grilled vegetables platter.


2 pounds of mixed fresh vegetables (tomatoes, red peppers, yellow peppers, onions, eggplant)

The marinade:

  • 2 cups of olive oil
  • 5 garlic cloves
  • 1 cup of finely chopped parsley
  • ¼ cup of fresh thyme
  • Salt and pepper to taste


Combine the marinade ingredients in a large bowl. Wash and cut the vegetables and place in the marinade. Let it stand for 20 minutes.

Preheat an electric grill over a medium-high temperature. Grill for several minutes. Enjoy our grilled vegetables platter recipe!
