Ingredients:

  • 1 cup of fresh goat’s cheese
  • 1 whole egg, bolied
  • ½ cup of red cabbage, shredded
  • Few lettuce leaves
  • 1 small tomato, chopped
  • 1 small onion, peeled and sliced
  • ½ cucumber, peeled and sliced
  • ½ red bell pepper, sliced
  • Few olives
  • 1 hot pepper
  • ¼ cup of olive oil
  • 1 tsp of mustard
  • 1 tbsp of finely chopped parsley
  • 1 garlic clove, crushed
  • Sea salt to taste
  • Black pepper to taste

Preparation:

Combine the olive oil with mustard, finely chopped parsley, and one garlic clove. Season with some salt and pepper and mix well.

Place the vegetables on a serving plate. Drizzle with the olive oil dressing and serve immediately. I am sure you and a friend will enjoy the vegetarian goat’s cheese salad 🙂
