This vegan potato salad is easy to cook and light. Not to mention vegan.
- 2 medium-sized potatoes, boiled
- 5 spring onions, finely chopped
- 1 small red onion, peeled and sliced
- Olive oil to taste
- Salt to taste
- Pepper to taste
First you will have to boil the potatoes. Peel and thoroughly rinse the potatoes. Slice and transfer to a deep pot. Add just enough water to cover. Bring it to a boil and cook for about 15 minutes, or until the potatoes have softened. Remove from the heat and drain. Allow it to cool for a while.
Meanwhile, prepare the onions. Trim the roots away and strip off any extra outer leaves. Finely chop and combine with potatoes.
Peel and slice the onion. Add to the salad mixture. Season with olive oil, salt and pepper to taste. You can add a few drops of fresh lemon juice, but this is optional.
Serve the potato salad cold. Enjoy!
