At veglibrary.com we just love soups and mushrooms. This vegetarian creamy button mushroom soup recipe is excellent 🙂
- 1 cup button mushrooms
- 2 medium-sized carrots, sliced
- 3 garlic cloves
- 2 tbsp. olive oil
- 4 tbsp sour cream
- 1 cup of milk
- ¼ tsp salt
- 1 tbsp of finely chopped celery
Wash and cut the mushrooms in half. Peel and slice the carrots. Heat up the olive oil in a large skillet. Add carrots and fry for about 10 minutes. Stir constantly.
Now you can add mushrooms and garlic. Mix well and cook for another few minutes.
Add 1 cup of water, 1 cup of milk, sour cream, and salt. Allow it to boil and remove from the heat.
Sprinkle with some celery and enjoy your creamy mushroom soup!
