Cabbage Rolls – Vegan Recipe

Cabbage rolls - vegan recipeThis vegan Cabbage Rolls recipe is similar to our Rice Rolls (except for the cabbage). They are both delicious and cruelty-free.


  • 1 pound fresh cabbage leaves
  • 1 pound of button mushrooms
  • ½ cup brown rice, cooked
  • 1 medium tomato
  • 1 tbsp fresh parsley, chopped
  • ¼ tsp sea salt
  • ¼ tsp black pepper, ground
  • 5 tbsp olive oil


Wash and drain the mushrooms. Using a sharp knife, cut the mushrooms into small pieces. Wash, peel and finely chop the tomato. Place it in a large bowl.

Combine with the mushrooms, rice, parsley, salt and pepper. Add about 2 tbsp of olive oil to this mixture. Place about 2 tbsp of this mixture in the center of each cabbage leaf. Roll up nicely tuck in ends.

Now add the remaining oil in a deep pot. Carefully place the rolls in a pot and add about 1 cup of water. Cover and cook over a minimum temperature for about an hour.
