Breakfast Casserole – Vegetarian Recipe

Forget bacon! For breakfast now you have a less cruel option: our vegetarian breakfast casserole (aka Spinach, cheese and mushroom pastry).


  • 1 pound of finely chopped spinach
  • 8oz cherry tomatoes
  • 5 whole eggs
  • ½ cup of all-purpose flour
  • 2 cups of milk
  • 1 cup of goat’s cheese
  • 1 tbsp of oregano
  • Salt and pepper to taste


Preheat the oven to 400 degrees. Line some baking paper over a small casserole dish. Set aside.

Briefly boil the spinach. Remove from the heat and drain. Place in a casserole dish.

In a medium-sized bowl, combine the cheese, milk, eggs, flour, oregano, salt, and pepper. Whisk together with an electric mixer. Add cherry tomatoes and pour this mixture over spinach.

Bake for about 20 minutes.

Enjoy the breakfast casserole and start afresh!

We had a similar spinach pastry in a coffee shop in Lima, Peru. It was delicious!
