Apple and cinnamon cookies…the taste of childhood desserts in an easy vegetarian recipe.
- 1 ½ cup oat flakes
- ¾ cup whole grain flour
- ¾ cup all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ¼ tsp baking soda
- 1 ½ tsp ground cinnamon
- 1 cup apple, peeled and grated
- ¼ cup water
- 1 whole egg
- ½ cup brown sugar
- ½ cup honey (can be replaced with sugar or agave nectar)
- ½ cup oil
- 1/3 cup milk (can be replaced with soy milk)
In a large bowl, combine the oat flakes, flour, baking powder, salt, baking soda, and cinnamon.
In another bowl, beat the egg with a fork. Whisk in the sugar, honey, oil, and milk. Gently pour the egg mixture into flour and mix with an electric mixer to get a smooth dough. Add grated apple and raisins and shape the cookies.
Bake for about 15 minutes at 350 degrees F.
