  • 1 ½ cup oat flakes
  • ¾ cup whole grain flour
  • ¾ cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ tsp baking soda
  • 1 ½ tsp ground cinnamon
  • 1 cup apple, peeled and grated
  • ¼ cup water
  • 1 whole egg
  • ½ cup brown sugar
  • ½ cup honey (can be replaced with sugar or agave nectar)
  • ½ cup oil
  • 1/3 cup milk (can be replaced with soy milk)


In a large bowl, combine the oat flakes, flour, baking powder, salt, baking soda, and cinnamon.

In another bowl, beat the egg with a fork. Whisk in the sugar, honey, oil, and milk. Gently pour the egg mixture into flour and mix with an electric mixer to get a smooth dough. Add grated apple and raisins and shape the cookies.

Bake for about 15 minutes at 350 degrees F.
